BOCK BOCK! CHICKEN NUGGETS!

These are quinoa chicken nuggets! Chicken nuggets are so fun and enjoyable to eat. Why not make them more healthy? On the coating of the chicken is quinoa, quinoa is a grain crop with edible seeds. Here is how you make them!

Total time= 30 minutes

Serves 4

Ingredients

3-4 boneless skinless chicken breasts, cut into 2 inch pieces

⅔ cup whole wheat flour

1 teaspoon sea salt

¼ teaspoon pepper

3 eggs

2 tablespoons water

2 cups cooked quinoa

(I liked to add some turmeric or cayenne pepper)

Instructions

  1. Preheat oven to 425 degrees and grease a baking sheet with olive oil. In a small bowl whisk flour, sea salt, and pepper. In a second bowl whisk eggs and and water. Place quinoa in a third bowl.

  2. Put the chicken pieces in the flour mixture, then eggs, and finally in the quinoa, making sure to coat well. Go ahead and place on prepared baking sheet.

  3. Spray chicken nuggets with amount of cooking spray you would like. More spray makes them more crispy, (make sure you're using a healthy spray like olive oil spray) bake for 15-20 minutes until the nuggets are cooked and browned. Next enjoy:)
